I used to love pudding. I still think about it – especially when I see those Jell-O commercials proclaiming that every diet needs a little wiggle room. Hello, GFCF people like wiggling too! Of course, I can’t find a pudding that is GFCF that compares to the low-cal, low-fat, low-carb, low-sugar options any normally functioning digestive system can handle.
So I’ve tried doctoring the boxes of fat-free, sugar-free cook & serve Jell-O pudding (only cook and serve is dairy-free argh!!). It just doesn’t really work with soy milk. It even, sadly, says so on the box.
But never one to give up on experiments…I thought I’d try using water and silken tofu instead of soy milk and then bake it. (Note – I only had a box of vanilla in the pantry, which is why I added cocoa…but I’m a chocoholic so I’d probably add cocoa to chocolate anyway LOL)
Baked Chocolate Tofu Pudding (GFCF & low-carb)
Ingredients:
- 1 box fat-free, sugar-free cook & serve Jell-O pudding (flavor is your choosing!)
- 4 ounces lite silken tofu
- 1 Tbsp dark cocoa powder
- 2 Tbsp sugar-free sweetener
- dash salt
- 1 ½ cups water
Directions:
1. Blend all ingredients together in a blender or food processor until smooth and well mixed.
2. Bake at 350 for 20 minutes or until top is firm and crackly.
Yummm chocolatey goodness....
